Chocolate does not have to be a guilty pleasure - in fact, it can be one of the healthiest parts of your diet and I want to share this with the world as it has completely changed my life!

I was diagnosed with M.E about 18 months ago and was forced to leave my job as a support worker. After not receiving much support from my doctor, I began looking for alternative forms of treatment to aid my recovery. After much reading and research, trying and testing a whole variety of things, I discovered a number of foods that made a huge difference to my energy levels. Soon i began experimenting with ways in which I could combine these ingredients to make something more palatable - and so began my journey into making chocolate...

I make Raw chocolate, i.e the methods for extracting/processing the ingredients and making them into chocolate use controlled temperatures, which retains the maximum nutrient of the food. Cocoa is made from roasting cacao beans - and this kills up to 90% of the nutrients in the chocolate! Most chocolate you find in the shops is made with cocoa and thus been stripped of most of its goodness. Often, milk is added to the mix, which inhibits your bodies ability to adsorb antioxidants.

My chocolate recipes are designed so that they not only taste super yummy, they are incredibly nutritious and healthy too. I use ingredients that compliment each others taste and nutritional benefits e.g purple corn not only adds a fruity sweetness, it also increases you bloods capacity to absorb antioxidants so you get the most out of the ingredients. All my ingredients are raw, organic and sugar free.
